Ingredients for 2 people:
- 250 g fresh spinach
- ½ clove of garlic
- Vinegar
- 2 fresh eggs
- 2 slices of bread
Preparation:
- Wash the spinach and put it in a pan without draining it. Squeeze in the garlic. Steam them, stirring, until they fall apart. Season with salt and pepper. Keep warm. (It is possible to use frozen spinach).
- Bring water to a boil, adding a tablespoon of vinegar in a large saucepan. Turn off the heat. The water should no longer boil.
- Carefully break the eggs and slip them into the boiling water.
- Let poach for 3 to 3.5 minutes max.
- Remove the eggs with a ladle or a skimmer
- Let them drain on a plate
- Toast the toast
- Arrange the plate, toast – spinach – eggs
- Season to taste
- Serve and finally TASTE!
