Peanut Butter Chocolate Energy Bites

Ingredients:

  • 80g Peanut Butter
  • 100g Honey
  • 2 Rice Crackers
  • 30g Peanuts (unsalted)
  • 100g Dark Chocolate (70% cocoa or higher)
  • 10-15g Coconut Oil

Preparation:

  1. Measure out the peanut butter, honey, rice crackers, peanuts, dark chocolate, and coconut oil. Crush the rice crackers into small pieces.

  2. In a heatproof bowl, melt the dark chocolate and coconut oil together. You can use a double boiler or microwave, stirring at intervals until smooth.

  3. In a large mixing bowl, combine the peanut butter and honey. Mix well until you have a smooth and uniform mixture.

  4. Add the crushed rice crackers and peanuts to the peanut butter and honey mixture. Mix until the ingredients are evenly distributed.

  5. Pour the melted chocolate and coconut oil mixture into the bowl with the other ingredients. Stir thoroughly to ensure all components are well coated.

  6. Place the mixture in the refrigerator for about 30 minutes to allow it to firm up. This will make it easier to shape into bites.

  7. Once the mixture has chilled, take it out and use your hands to roll it into bite-sized balls. You can make them as big or as small as you like.

  8. Optionally, you can roll the energy bites in additional crushed peanuts or coconut flakes for added texture and flavor.

  9. If the bites have softened during shaping, you can place them back in the refrigerator for another 15-20 minutes to set.

  10. Your healthy peanut butter and chocolate energy bites are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator.
