Œufs Brouillés Sucrés

Ingredients:

  • 2 eggs
  • A splash of coconut milk or any other milk
  • 1 banana
  • 60g oats
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup

Toppings (Optional):

  • Berries (e.g., blueberries or raspberries)
  • Turkish, Greek, or coconut yogurt
  • Nuts and seeds

Instructions:

1. Prepare the Mixture:
  • In a bowl, mash the banana until smooth.
  • Crack the eggs into the bowl and whisk them together with the banana.
  • Add a splash of coconut milk and mix until well combined.
  • Stir in the oats.
  • Add the tablespoon of maple syrup and mix thoroughly.
2. Cook the Eggs:
  • Heat the coconut oil in a frying pan over low heat.
  • Pour the egg mixture into the pan.
  • Cook while stirring continuously on low heat until the eggs become soft and creamy.
3. Serve:
  • Transfer the sweet scrambled eggs to a plate.
  • Serve with a side of fresh berries.
  • Add a dollop of Turkish, Greek, or coconut yogurt.
  • Top with a mix of nuts and seeds for extra texture and nutrition.
